It's Sponging Time

I've always been a mad baker, like most women i guess!
With all things spongy being "in trend" it's hard to "breakthrough" with this sort of start, as there are so many blogs and sites dedicated to the wonderful world of baking. Ones that i frequently visit for ideas and things. 
But this year, i was given a recipe book from a very close friend that is just begging to have every one of it's recipes made. 
I've decided to document everything i do with cooking and baking from now on, putting it in this blog. It's sort of my own "online recipe book". However i have been looking at Moleskine's latest recipe one. For that slightly more twee take on everything.


I made these individual Victoria Sponges for a friends baby shower, which turned out really well and tasted great too! A very simple cake that should be everyone's staple recipe. 
It never fails to make someone "mmmm" at the thought of yummy whipped cream, delicate light sponge and a tart raspberry jam.
Have with freshly made lemonade in the sun. Or a freshly made coffee (from beans not instant!) in the winter.
